Hugin needs a novice friendly way in

I am preparing stitched mosaics (up to 0.5 - 20 GB files) of high resolution scans and photos of C19th prints. There will be about 500 of them.
It appears that Hugin could do this job, but there does not seem a way into the system. For instance, the help file"Stitching a photo-mosaic" starts somewhere in the middle of the process - "Mosaic lens model". What should I do to apply the model to my images?

Would it be easy for those who know the system to prepare some sample work flows for the various types of applications?

There are already some tutorial at the official page: http://hugin.sourceforge.net/tutorials/index.shtml
one especially for stitching scanned images with a step for step instructions.

Furthermore Hugin comes with some so called user-defined assistant which are based on these tutorials (and some on issues discussed on the mailing list). These are available from the panorama editor, menu Edit>User defined assistant>...
E.g. there are 2 assistants for stitching scanned images: one based on the tutorial http://hugin.sourceforge.net/tutorials/scans/en.shtml and the other based on the mentioned wiki page https://wiki.panotools.org/Stitching_a_photo-mosaic.
