Install the pavucontrol package. Start recording in audacity. Open pulseaudio volume control (pavucontrol), on the tab "recording application", change audacity to take its input from "Monitor of <your soundcard name>". Now you're all set up to record "what you hear".

Did not work directly for me, additionnally I had to do the following:
Open pavucontrol and go to the tab "Input devices" and check the option "View all input devices", then enable the option "Set as fallback" for the "Monitor of <your soundcard name>".
With this option enabled Audacity started to record the output of the soundcard.

Many thanks to David for the initial reply!
