Do you mean a multi-band equalizer, like in Amarok? Or just volume input/output controls?

I want to change settings for listening to films. Amarok is set up nicely!

Actually, what I'm really trying to achieve is:
1) some films go really loud and then really quiet and you have to keep playing with the volume. I want some way of getting the system to compensate for this and sort the gain out automatically.

2) kaffeine is louder than amarok when playing DVDs. Can the system compensate for this too and have application specific gains?

Based on what you are asking for, I think PulseAudio might be the best fit for you.
http://pulseaudio.org/
And ubuntu information on it here:
https://wiki.ubuntu.com/PulseAudio

It's currently a modification of the base system, but may soon be the default sound system.
Hope this helps!
