You can resize using the following howto: http://ubuntuforums.org/showthread.php?t=1625371

It's possible to store data on the windows /host partition - especially data that you might want to access from Windows as well. In addition, it's safer storing data on the /host because the Wubi virtual disk is actually a single file (so corruption or accidental deletion can result in a loss).

Another idea - if you're starting to use Ubuntu more you might consider migrating to a normal dual boot: http://ubuntuforums.org/showthread.php?t=1519354
